- Pressure cook all the vegetables for 1 whistle..
- Heat oil in a kadai and splutter mustard seeds..
- Add finely chopped onion, finely chopped green chilli, curry leaves, crushed fennel seeds and ginger garlic paste..
- Saute well until the onion become light brown in colour..
- Add turmeric powder, red chilli powder, coriander powder and garam masala..
- Saute for few minutes..
- Then add chopped tomato and cook till the tomato becomes soft..
- Add cooked vegetables, water as per your consistency and salt..
- Mix well and cook it for 5 minutes in medium - low flame..
- Add coconut milk and switch off the flame..
- Garnish with some coriander leaves..
- The tasty vegetable kurma is ready to serve..
