Vegan Autumn Spiced Cookies Speculaas cookies are a very popular spiced cookie in the Netherlands. Since they are one of my all time favourite cookies, I wanted to make them vegan. Ingredients of Vegan Autumn Spiced Cookies

  1. It's 1/2 cup of maple syrup.
  2. Prepare 1/2 cup of coconut oil at room temp.
  3. It's 1/4 cup of Apple Cider vinegar.
  4. Prepare 1/4 cup of granulated sugar.
  5. You need 1/3 cup of brown or coconut sugar.
  6. Prepare 1 cup of all purpose flour.
  7. Prepare 1 cup of Wholeweat flour.
  8. You need 1/2 tsp of baking soda.
  9. It's 1/2 tsp of baking powder.
  10. You need 1/2 tsp of salt.
  11. Prepare 1/2 of ground cinnamon.

  14. It's 1/4 tsp of all spice.
  15. Prepare 1/4 tsp of black pepper.
  16. You need 1/4 tsp of ground cloves.

Even though the sale of Speculaas cookies is predominantly around the holiday season. Vegan lebkuchen, or traditional German spice cookies, are a common treat around Christmas.
