Vegetable Kurma Kurma is also called as korma. There are many variations in making korma. This vegetable kurma tastes great with paratha, poori, dosa! You can cook Vegetable Kurma using 17 ingredients and 8 steps. Here is how you achieve that.

Ingredients of Vegetable Kurma

  1. You need 1 of Onion - medium , coarsely chopped.
  2. It's 1 of Tomatoes - medium , coarsely chopped.
  3. Prepare 3 or 4 of Green chillies -.
  4. It's 1 inch of Ginger -.
  5. It's 3 - 4 cloves of Garlic -.
  6. Prepare 1 bunch of Coriander leaves -.

  8. You need 1 inch of Cinnamon -.

  10. Prepare 2 of Elaichi -.
  11. It's 1 tsp of Fennel seeds -.

  14. You need 1 cup of Cauliflower florets -.
  15. Prepare 1 cup of Green peas (cooked/frozen)-.
  16. It's 1 cup of Carrot -.

Vegetable Kurma is a South Indian style curry of mixed vegetables cooked in a creamy coconut cashew based sauce, lightly spiced with cinnamon and cloves and fennel. Vegetable Kurma step by step

  1. Assemble all ingredients necessary for the gravy. (Tomatoes not included in the picture).
  2. In a deep bottomed pan pour about 2-3 tsp oil. Once the oil is hot, reduce heat to low, and add in spices followed by green chillies, ginger and garlic.  Increase the heat to medioum, and add on the onions. Once the onions turn translucent, add salt, chilli powder, coriander powder and garam masala. When the mix turns dry, add the tomatoes and mix well. In a while the tomatoes will turn mushy and oil will separate out. Add the coriander leaves now and keep sauteing in low flame. Turn off hea....
  3. After this mass cools down, grind it to a coarse paste using a mixer or blender..
  4. In the meanwhile, assemble all the vegetables together.  Cut them into bite size cubes. You can have all the veggies listed above, or add or take off some as per your choice and availability. But try and have the potatoes and carrots for sure. Do not use any mushy vegetables as it can turn the texture of the kurma to be soggy..
  5. Boil the vegetables in a wide open pan. Make sure to add the veggies in decreasing order of toughness. As much as the vegetables need to cook together to imbibe each others flavor, they need to maintain their individual taste and texture as well!.
  6. I used green peas, potatoes, beans, carrots, cauliflower and added them in the same order.  I have soaked the green peas overnight and pressure cooked them for 2 whistles.  You can very well choose the easier method - use frozen peas, but do not replace the other veggies for frozen ones..
  7. Once the vegetables have cooked add salt and the ground paste and mix well.Simmer well for 5-7 minutes..
  8. Kurma ready to be served!! Ideal with chapathi or parotta and even with dosa/uthappam..

Please note that, the recipe in this video is. Vegetable Kurma or Vegetable Korma is my go-to recipe for a number of reasons. But, let me confess and say upfront that I made this very similar to the navratan kurma which The Husband really digs..kurma, parotta kurma, the simple potato kurma, tomato kurma, chapati kurma and vegetable kurma for rice. Indian mixed vegetable kurma recipe is very very close to the hotel style kurma. This korma is a South Indian dish prepared with a combination of different vegetables.
